How about a Monster Cookie beer? 

That’s one of the brews a new uptown Sioux Falls business plans to offer. 

 Severance Brewing Company will be located in The Cascade. 

Even though the $43 million mixed-use project isn’t done yet, several businesses have already signed up. 

Two local families, Scott and Melissa Heckel and Mark and Jennifer Stavenger, are behind the brewery. 

The plan is to have patio seating and install garage doors facing the Levitt to take advantage of the free musical performances. 

In addition to a Monster Cookie brew featuring all the ingredients from the classic cookie recipe including peanut butter, oatmeal and chocolate, other signatures will be a spicy hot chocolate porter and coconut tan stout. 

The brewery will also begin a sour program right away and hopes to open next summer.
