Fudgy Porter Chocolate Cookies with Porter Cream Cheese Frosting Recipe

Eight words: Fudgy Porter Chocolate Cookies with Porter Cream Cheese Frosting. Ok, maybe more like nine. We lost count after “Fudgy Porter.” These cookies, created by our local culinary genius Justin Golinkski, are perfect to leave out for “Santa”- ideally with a cold one in reach. Enjoy!

Ingredients:

For the Cookies

  • 1/2 cup butter, softened
  • 4 ounces cream cheese, softened
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 1 Tbls. Founders Porter (or any dark beer)
  • 1 egg
  • 2 1/4 cups flour
  • 1/2 cup dark cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder

Instructions

Preheat the oven to 375 degrees.  Spray a regular sheet pan with nonstick baking spray.

Beat the butter until creamy. Add the cream cheese and beat again.

Pour in both sugars and beat the mixture until light and fluffy. Add the egg and Founders Porter and beat again.

Stir together the flour, cocoa powder, salt, and baking powder in a separate mixing bowl. Slowly add it to the butter mixture until everything is mixed in.

Use a spoon to divide the dough into 24 dough balls.

Roll each one into a ball and place on the prepared pan. Bake for 11-12 minutes. Remove and let cool in the pan for 2 minutes.

Press the centers of each cookie down with the back of a spoon. Remove the cookies gently from the pan and place on a wire rack to cool completely.

Porter Cream Cheese Frosting

  • 4 oz. cream cheese, at room temperature
  • 1/2 tsp. pure vanilla extract
  • 1 cup powdered sugar
  • 1 Tbls. Founders Porter (or any dark beer)

Using a hand mixer, combine cream cheese, Porter, and powdered sugar in a medium mixing bowl until smooth and consistent.  Dollop frosting on each cookie, or refrigerate until ready for use.  Decorate with sprinkles or chocolate chips if desired.
